Toasted Rye Slices

1 loaf sliced cocktail rye bread
1/2 cup Garlic Butter (recipe follows)
1/2 cup grated Parmesan or romano cheese


1. Position the broiler rack 4 inches from the heat source and preheat the broiler. Lightly grease the broiler pan.
2. Broil 1 side of the bread slices until lightly toasted. Spread the untoasted side evenly with Garlic Butter and sprinkle with the cheese. Broil for 2 to 3 minutes until browned. Cut each slice of bread in half on the diagonal and serve hot.


Garlic Butter
Makes: About 1/2 cup
1/2 cup unsalted butter
2 cloves garlic, minced salt and white pepper


In a saucepan, melt the butter over medium heat. Add the garlic and season with salt and pepper, stir, and cook gently for about 5 minutes. Strain into a small bowl, cover, and chill until ready to use.
