1/3 cup butter or margarine
1/3 cup packed dark-brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
4 bananas, halved lengthwise
1/4 cup half-and-half
1/3 cup brandy
1 quart vanila ice cream




1. In a deep skillet, melt the butter over medium heat. Add the sugar, cinnamon and nutmeg and stir until the sugar dissolves. Add the bananas and cook for 3 to 4 minutes until the fruit begins to soften.
2. Add the half-and-half, stir gently, and cook for 2 or 3 minutes, or until slightly thickened.
3. Divide the ice cream among 4 plates and top each servings with 2 banana halves.
4. In a small saucepan, heat the brandy over low heat. Remove the pan from the heat and carefully ignite the brandy. Pour the flaming brandy over the bananas.


Cooking Note: This can be made in a chafing dish.
