Sausage Muffins

1/2 pound pork sausage
butter or margarine, melted
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg
1 cup milk
1/2 cup shredded American or Cheddar cheese



1. Position the rack in the center of the oven and preheat to 375 degrees F. Lightly grease 12 muffin cups or line them with paper liners.
2. In a saucepan, cook the sausage over medium heat, stirring with a fork, for 7 or 8 minutes or until browned. Drain, reserving the drippings. Add enough melted butter to the drippings to measure 1/4 cup.
3. In a bowl, combine the flour, sugar, baking powder and salt and whisk to mix.
4. In another bowl, using an electric mixer on medium speed, beat the egg until foamy. Add the milk and the drippings and beat well. Add the flour mixture and stir just until moistened. Add the cheese and sausage and mix well.
5. Spoon the mixture into the muffin cups and bake for 15 to 18 minutes or until a toothpick inserted in the center of a cup comes out clean. Cool on wire racks.



Makes: 12 muffins
