1/2 cup finely chopped cashews or pecans
2 ounces Cheddar or Colby cheese, at room temperature
1/2 cup finely diced cooked chicken
1 small white onion, minced
2 tablespoons dry sherry or white port wine
salt and pepper




1. In a shallow dish or pan, spread the chopped nuts in a single layer.
2. In a medium bowl, combine the remaining ingredients and mix well. Using a serving spoon or a small ice cream scoop, form the mixture into balls and roll each in the nuts to coat. Place on a tray, cover and refrigerate for at least 2 hours. Serve cold.
